The 2023 Domaine Sérol Pourquoi Faire Sans Blanc Chenin Blanc is a vibrant and fresh wine made from organically farmed Chenin Blanc grapes sourced from high-altitude limestone plateaus in Limoux. The grapes were directly pressed and fermented with ambient yeasts, then aged for six months in 500L barrels, foudre, and concrete tanks. The wine is lightly filtered and has minimal sulfur added before bottling. This wine showcases beautiful floral and citrus aromas, with a crisp and refreshing profile that is ideal as an apéritif. It also pairs wonderfully with simple fish dishes. Domaine Sérol, led by Stéphane Sérol since 1996, has cultivated a reputation for producing high-quality wines from the Côte Roannaise, with a strong focus on biodynamic viticulture. Although 2021 was a challenging year for the estate due to frost damage, Stéphane sourced these Chenin Blanc grapes from trusted grower friends to produce this exceptional wine. The result is a lively, aromatic Chenin Blanc with remarkable freshness and complexity.
